Evidence from the Food Supply chain suggests that food retailers often exhibit a reluctance to share information with their suppliers even when this benefits both parties. For example, inventory coordination and reduced costs may be realized by adopting appropriate supply chain management technologies such as cooperative planning, forecasting, and replenishment. This behavior is explained by viewing information as a strategic asset and modeling information exchange and the corresponding adoption of information technologies and analysis as a strategic game, i.e., an economic model where food retailers and their suppliers operate with uncertainty. In the light of lessons learned from recent disasters (The London Subway Bombings, and Hurricane Katrina), it has become clear that government and private organizations need to be prepared to communicate effectively with consumers before, during and after a disaster in order to minimize harm to consumers and to the nation. Findings from a national survey of attitudes of U.S. Residents about terrorism provides information for the development of such communications. Every year hundreds of food recalls are made due to contamination. The main focus of this paper is to examine the effects of specific food events on consumers’ confidence in food safety as well as their preparedness regarding the United States food system. The food events studied in this are major food-borne illnesses outbreaks and recalls that have occurred since May 2008. The three events chosen included: the salmonella outbreak in jalapeno and Serrano peppers occurring in 2008, the salmonella outbreak in peanut butter occurring in 2009, and the E.coli outbreak in Nestle cookie dough occurring in 2009. Analysis of Media Agenda-Setting Effects on Consumer Confidence in the Safety of the U.S. Food System AgEcon

Results from continuous tracking of consumer confidence and media coverage of food safety events over a 67 week period between May 2008 and August 2009 are reported. An ordered probit model is used to test the hypothesis that media coverage of food safety events affects consumer confidence in the safety of the U.S. food system. The results show that media coverage significantly and negatively affected consumer confidence in the safety of nation’s food supply during the sample period. Socioeconomic and demographic factors such as geographic region, use of media source, household size, age, ethnicity, education, and gender also had significant affects on consumer confidence in the safety of United States food supply.

Castleberry's: 2007 Botulism Recall; A Case Study by The Food Industry Center AgEcon

This case summarizes the available information on the 2007 Castleberry’s recall and food recalls in general, and raises questions prompted by a recall of this magnitude. A massive, nationwide recall of Castleberry’s canned food due to botulism in the summer of 2007 illustrates the complexity of the food industry. Product from a single production line at a single plant, packed under 90 labels (the company’s own store brands and foodservice), spurred a recall of tens of millions of cans of food. While every recall is important and unique, the breadth of the Castleberry’s Food Company recall and the severe consequences from botulism lend themselves to this exemplary case study.

This paper contains two chapters related to changes in retail food delivery and sales. The first discusses trends in consumer demographics and lifestyles and how these continue to drive changes in the way food is prepared and delivered to consumers. Retail stores are responding with new formats: providing more ready to eat foods; more convenient store layouts; lower prices and better service in niche markets across the country. Their demands send signals up the food chain to processors and producers that alter their production and inventory decisions. This paper investigates the association between weight and elementary school students’ academic achievement, as measured by standardized Item Respond Theory scale scores in reading and math. Data for this study come from the 1998 cohort of the Early Childhood Longitudinal Study, Kindergarten-Fifth Grade (ECLS-K), which contains a large national sample of children between the ages of 5 and 12. Increased concentration in ownership of retail and wholesale food companies in the United States naturally leads to the question "How does concentration of ownership affect consumers?" Does it lead to higher or lower food prices, better or worse service, more or less choice between stores and among products, and more or less employment and earning opportunities in the food sector? A series of recent and serious food safety incidents have generated a national debate over the significant costs that they impose on various stakeholders - consumers, industry, or the government. This paper examines the impact of media coverage of food safety and defense issues on consumer confidence in food safety, and measures the response of stock prices of food companies to changes in consumer confidence. Results show that, increases in media coverage have a negative impact on consumer confidence, and that decreases in the levels of consumer confidence on food safety have a negative impact on stock prices of food companies, in particular for the larger firms. Consumers’ concerns about food attributes related to health, safety and nutrition were ascertained by way of a mailed survey in the metropolitan area of St. Paul/Minneapolis, Minnesota, in 1993. An ordered probit analysis was conducted to determine how these concerns correlated with eating habits - specifically increasing, decreasing or making no change in the consumption of various types of meats. Those who had decreased their beef consumption were concerned about their intake of sodium, fat and cholesterol. They also preferred a variety of foods and tended to be older and better educated. Taste, appearance and guaranteed safety ranked high on a list of food attributes consumers preferred.

Consumers make choices about where to shop based on their preferences for a shopping environment and experience as well as the selection of products at a particular store. This study illustrates how retail firms and marketing analysts can utilize data mining techniques to better understand customer profiles and behavior. The purpose of this consumer survey was to learn more about consumer preferences for meat characteristics. Value added meat processors faced with the problem of trying to identify market niches wanted to know what types of consumers had similar preferences and what their specific preferences and concerns are. In addition, we wanted to learn more about attitudes that are believed to be changing due to new information about the relationship between diet and long term health, lifestyles that demand more convenient foods and less home cooking, the environmental impacts of cattle production, and social issues such as animal rights.

While Americans claim to be eating better and improving their understanding of diet and health, they are getting heavier and increasing their risk of suffering from diet related illnesses. The cause of this inconsistency is unclear. Using theoretical models of preference reversal and econometric empirical analysis, this study finds that the number of calories eaten per meal increases and the quality of the diet decreases as people wait more than six hours to eat their next meal, work more than fifty hours a week, and consume a larger amount of food away from home.
